Colour segregation or coding in food & beverage factories is very important when it comes to managing different zones. Cross-contamination is a common food safety issue because if employees are unaware of the zoning, there is a high risk that bacteria from a ‘low-care zone’ is carried to a ‘high-care zone’.
Low care zones is the area within a food factory that needs the lowest level of hygienic care. This zone usually contains packaged foods. High care zones isĀ the area that needs the highest level of care as it is usually where foods that have already been processed / cooked are exposed.
Although there is no requirements for colour coding yet, it is a practice that regulatory authorities (auditors) favour.
